Avocado Ice Cream

3 avocados
thei juice of half a lemon
1dl coconut milk
1dl cream
1dl Verso Fava Bean Mix
Verso Fava Bean Granola (Natural or Cranberry) for topping


Blend all ingredients together (not the granola). Note that the coconut cream is quite sweet in itself so you won't need to add that much honey. Blend until the mixture is smooth except for the Fava Bean Mix which may remain crunchy. Place in the freezer and stir every few hours until ready. Sprinkle some granola on top of the servings for decoration.

Tip! As this ice cream doesn't contain additives or stabilizers it can easily freeze and become very hard. If you've kept the ice cream in the freezer for long you might want to soften it up in a water bath before serving. Be careful not to defrost it too much, though!
