Berry and Fava Bean Granola Pie

app. 20 portions

150 g butter or margarine
3 1/2 dl wheat flour
1 1/2 dl almond flour
2 dl sugar
1 teaspoon vanilla sugar
2 teaspoons baking powder
2 dl Verso Fava bean granola
1 egg
1 dl whipping cream

Filling
1 pot (250 g) quark
1 egg
4 tablespoons sugar
250 g fresh or frozen berries
2 tablespoons potato starch

Melt the butter or margarine in a pan. Measure dry ingredients, except granola, in a bowl and stir the melted fat into the mixture. Take ¼ of the dough into another bowl and stir the granola into the dough until the mixture resembles breadcrumbs. Mix the egg and whipping cream with the rest of the dough. Spread the soft base dough evenly in a pie dish (diameter 28 cm). Prepare the filling: first mix together the quark, egg and sugar. Mix the berries and potato starch together and spread on the dough. Add the quark mixture over the berries. Bake on the lower level of the oven, 200Co, for app. 35 minutes. Allow the berry and fava bean granola pie to cool properly.

Tip: All fruits and berries of the season, such as apples and cherries, are suitable for this pie.
