Cherry Tomato and Fava Bean Pasta

4 portions

300 g pasta, e.g. "bucatini" pasta

Cherry tomato fava bean sauce
1 onion
1 garlic glove
1 tablespoon oil
1 can (400/240 g) canned cherry tomatoes
1 dl water
2 tablespoons tomato puree
1 tablespoon soft brown sugar
  pinch of salt and crushed black pepper
  pinch of crushed chilli
1 1/2 dl Textured Fava Bean Mix

 

In addition
1-2 dl pecorino shavings
  fresh basil

 

Cook the pasta in salted water. Peel and chop the onion and garlic glove and sauté for a while with oil in a pan. Add cherry tomatoes and rinse the can with water. Add the water, tomato puree and spices into the pan. Let the sauce cook for 10 minutes. Drain the pasta and save ½ decilitre of the cooking water. Add the cooked pasta and the cooking water into the sauce and stir together all ingredients. Pour on plates and serve with pecorino shavings and chopped basil.
